Garlic Scape Butter

Once I learned about Garlic Scape Butter, I knew I could never be without it.

Every garlic season, I make batch after batch and tuck it away in the freezer so we can enjoy that fresh garlic flavor long after the scapes are gone. In fact, I may have gone a little overboard in 2024—but that turned out to be a blessing when our garlic crop failed in 2025. We didn't have fresh garlic, but we still had plenty of Garlic Scape Butter waiting in the freezer!

This simple recipe comes together in about 15 minutes and is one of the easiest ways to preserve the harvest. Fresh garlic scapes are blended into creamy butter, creating a rich, flavorful spread that instantly upgrades almost any meal.

We melt it over vegetables, spread it on warm bread, stir it into potatoes, and use it to add garden-fresh flavor to countless dishes throughout the year. Honestly, the hardest part is deciding what to put it on next.

Garlic Scape Butter

Garlic Scape Butter is one of my favorite ways to preserve garlic season and enjoy fresh garden flavor all year long. This easy 15-minute recipe freezes beautifully and can be melted over vegetables, potatoes, bread, and more.

Ingredients

  • 12 Garlic Scapes
  • 1 C. Butter, Softened
  • ½T. Lemon Juice

Directions

  1. Cut the flower blossom off the scape and discard. Chop the scapes in 1-2” pieces and place into the food processor. Pulse until finely chopped.
  2. Add the softened butter and lemon juice to the food processor. Pulse until well combined.
  3. Store in freezer containers. Label & date.
