We are scooping A LOT of pepper seeds right now, and there is one pretty delicious perk to all that seed saving...

I find myself with a whole lot of pepper shells!

Sometimes we slice and dice them and fill the freezer for winter, but this time of year I also try to eat as many of those beautiful peppers fresh as we can. When the garden is giving you this much goodness, you find ways to put it on the table!

Last week, that meant stuffed peppers. Three times.

And I couldn't stop with these Philly Cheesesteak Stuffed Peppers.

They have all those flavors we love from a Philly cheesesteak, tucked right into a fresh pepper instead of a bun. They're cheesy, hearty, packed with flavor, and best of all—they come together quickly.

That's exactly the kind of supper I need during this busy season. We're spending our days with so much harvesting and seed saving. By the time supper rolls around, I want something I can whip up quickly and get hot, fresh food onto the table without a lot of fuss.

So if your garden is overflowing with peppers right now too, save a few from the freezer pile and make these Philly Cheesesteak Stuffed Peppers.

Philly Cheesesteak Stuffed Peppers

Philly Cheesesteak Stuffed Peppers

Garden peppers are piling up, and these Philly Cheesesteak Stuffed Peppers might just be my favorite way to use them! They're cheesy, hearty, full of flavor, and quick enough to get a hot, garden-fresh supper on the table during the busiest part of harvest season.

Ingredients

  • Roast Beef, Cooked & Thinly Sliced

  • Sliced Provolone Cheese

  • 6 Bell Peppers

  • 1 Sm. Onion, diced

  • 8oz. Container Fresh Mushrooms, sliced

  • 2 T. Butter

  • 2 T. Oil of choice (we use avacado)

  • 2 Cloves Garlic, Minced

  • Salt & Pepper, To Taste

Directions

  1. Preheat oven to 400 degrees.

  2. Cut peppers in half. Remove seeds, ribs and stem. Place face up on a lined cookie sheet.

  3. In a cast-iron skillet heat up butter and oil over medium heat.

  4. Add to skillet: onions, mushroom, garlic and season with salt & pepper. Saute until mushrooms are golden and onions are tender.

  5. Dice roast beef and toss into the mushroom and onion mixture. Stir to combine well. Remove from heat.

  6. I like to put a layer of provolone cheese on the pepper, a scoop of the meat mixture, another layer of cheese. You stuff the peppers how your family will enjoy them! We just want to fill those peppers evenly with the meat mixture and a layer of cheese.

  7. Place stuffed peppers in the oven for 15-20 minutes until the cheese is melted and golden. Serve hot.
