True story: I didn't even like Mexican food until I was in my late twenties and pregnant with our first child.

Something flipped during that pregnancy, and apparently it flipped for good because now I could happily eat Mexican food multiple times a week!

One night I found myself craving fresh Salsa Verde, so into the kitchen I went. Tomatillos, peppers, and all those fresh flavors come together into the most delicious green salsa—and ooooh, this one did not disappoint.

And while you could patiently put it in the refrigerator and wait for it to chill...

I highly recommend grabbing a chip and eating some straight out of the blender while it's still warm.

Seriously. SO good.

Fresh, tangy, a little zippy, and packed with flavor, this is one of those simple recipes that makes you wonder why you weren't making your own Salsa Verde all along.

Now grab the chips. Yum!!

Salsa Verde

Salsa Verde

Fresh, tangy, and packed with flavor, this homemade Salsa Verde is one you'll want to eat straight from the blender! In fact, I highly recommend trying that first warm scoop before it ever makes it to the refrigerator.

Ingredients

  • 1 lb. Tomatillos, husked & washed, quartered

  • 3 Jalapeños

  • ½ md. Onion, quartered

  • 2 cloved Garlic

  • ½ C. Fresh Cilantro

  • 1T. Lime Juice

  • 1 tsp. Salt

Directions

  1. Preheat oven on Broil Setting.

  2. Remove tomatillos from husks and give them a good rinse. Cut into quarters and place on a lined cookie sheet.

  3. Remove seeds, ribs and stems from jalapeños and place on cookie sheet.

  4. Peel Garlic and cut in half and place on cookie sheet.

  5. Place tomatillos, jalapeños, and garlic into the oven for 10 minutes. Stir half way. We want them to be well roasted with a bit of color just starting.

  6. Meanwhile add onions, cilantro, lime juice, and salt to a blender.

  7. Add in the broiled tomatillo mixture to the blender. Blend until smooth. Be careful when removing the lid as there will be a lot of steam.

  8. Feel free to enjoy warm. Or keep chilled in the fridge.
